Amato's Pizza takes health and ingredients very seriously, so we use unbromated, unbleached flour for our handmade dough. Unbromated flour is regular flour that does not contain bromate, bleach, or any other additives. The use of potassium bromate results in residual concentrations in bread having unhealthy effects. Potassium bromate is a possible human carcinogen, and several organizations, and countries have banned its use as a flour additive. Even though working with unbromated flour takes more time, it is a safer and healthier choice. A Sicilian pie is cooked in a square pan with olive oil, but the key difference is in the dough. For Sicilian pizza, the dough needs extra time to rise, resulting in a softer, airy crust layer than the standard regular pie. In addition, a Sicilian pie, more often than not, has a sauce layer on top of cheese. Photos of Sicilian pies can be viewed on our Facebook page- https://www.facebook.com/amatospizzashop
